Pl suggest itinerary in Taipei / surrounds for 6 nights Nov 2015

Hi travel experts, would appreciate if you could please suggest a somewhat relaxed itinerary for first time visitors to Taiwan. (Mother 50's and daughter 20yrs visiting mid Nov 2015)

What is a nice and interesting area to relax in ? Better suggestions than Sun Moon lake as per below ? is it worth spending a night there or where else would you recommend ?

Any other suggestions for a nice day trip other than Pingxi ?

We are interested in a bit of sightseeing, looking around at quaint shops, scenery, good food and only leisurely walking (no hiking). Boat, gondola and train rides also OK. Would like to try out Taipei's HSR. We are coming from Melbourne, Australia.

Budget is low-mid - can anyone recommend a reasonably priced English tour guide ?

This is my current idea:-

Day 1 - check into hotel in ximending around 2:30pm when we arrive and look around (is this a good area to base ourselves in ?)

Day 2 - Day trip to Pingxi railway and explore Jiufen/Jinguashi afterwards. Need some ideas on how best to set about this. possibly need an English speaking guide to make best use of day.

Day 3 - Look around Taipei by ourselves

Day 4 - Go to Taichung by HSR, get to a hotel and stay overnight in the area and look around

Day 5 - Look around further in the Sun Moon Lake area and get transported to Taroko Gorge

Look around and get transported to Taipei hotel

Day 6 - Chill in Taipei by ourselves

Day 7 - Depart

I also read somewhere to take the train down the east coast from Tokoro Gorge and around the bottom to Tainan. Spend a few days there then pick up the west coast bullet train. Stop in Taichung and rent a car to visit Sun Moon lake and the awesome mountain road from there to Alishan. Then continue back to Taipei. How long would this trip take leisurely ?

Can anyone recommend a reasonable English speaking tour guide/reliable driver ?
