Elephants Caves are fantastic. Do not miss.
In ten Elephanta Island you can also get a local food meal (Thali), remember to not eat uncooked or cold food. Only steaming hot.

Shop at Colaba Causeway, the same lane which has Cafe Leopold. You will get all kinds of souvenirs.

Just back from India. We spent 3 days in Mumbai, but 2 days would have been all we needed.

I strongly recommend booking a full day private tour - you'll see so much more than what you're suggesting.

If you eat at the Taj, you'll automatically see India Gate, worth no more than 15-30 minutes, IMO. Colaba (busy shopping street), should have anything you'd want to buy in the way of souvenirs. As with many shopping areas in India, it's crowded and unpleasant.

We flew over the slums several times on our trip, going in and out of Mumbai. I can't understand why anyone would want to visit them. I would feel uncomfortable and unwanted.

I would also suggest seeing the huge outdoor laundry, best viewed from an adjacent street bridge. You'll find it memorable.

There are many more things to see, and our tour (with Indian Panorama) covered them in one day.
