Itinerary 3-1/2 week trip to Hong Kong, Vietnam, Cambodia, Thailand

We recently retired and the two of us are planning to travel for 3-1/2 weeks to southeast Asia in November. We are developing our itinerary now and are looking for help for the specifics. We are interested in visiting one or two of the larger cities, but also interested in visiting more “natural" national park type areas, and also interested in visiting one or two beach areas, maybe some islands. Would like to stay in nicer hotels.
Looking for help with developing the itinerary, along with nicer hotel suggestions.
Any suggestions would be appreciated.

Our very rough itinerary now is:
Hong Kong - about 5 days
Vietnam - about 9 days (possibly HCMC, Hanoi, plus some National Parks + beach)
Cambodia - about 3 days (Angkor Wat)
Thailand - about 8 days (possibly Chang Mai, maybe Phuket, plus some National Parks areas + beach)

Looks like you've got an itinerary, but not put much thought into whether it's remotely doable...which it isn't.

From what you've listed, moving around would leave you on the constant move and exhausted, long before your 3.5 weeks is up.

Here are my thoughts:

Hong Kong: fascinating city with the lovely natural areas for hiking and such. Most expensive city in Asia for hotel rooms.

Vietnam: In 9 days you expect to visit the two largest cities plus some national parks and beach. This is completely unrealistic. In 9 days, you could visit both Hanoi and HCMC. Consider that each time you change locations, it uses up at least half a day, more if you are coming/going from non-city locations.

Cambodia: It takes three full days just to see the major temples at Angkor. So you would need to stay in Siem Reap four nights. Lots of lovely reasonably priced hotels here.

Thailand: You could spend your 3.5 weeks all here (or all in VN) and not see it all. I highly recommend you spend some time in Bangkok. Stay in a lovely hotel along the river and visit some the the remarkable wats. Some people love Chiang Mai but be aware that it is a large, sprawling city with no public transport. If you want to see Thai countryside, you can do it from here, but I'd recommend not staying IN Chiang Mai if that is your goal. For beach in November, look at places on the Andaman Sea: Phuket, Krabi, Khoa Lak, Ko Lanta, etc.

Once you have your itinerary nailed down, we'll be glad to help with hotel recommendations. But to get good recommendations, you'll need to give us a per night budget.
