I would suggest you do some searches for details of all the tours. Briefly the main day/half day tours which are popular are:-
a> Sam Roi Yot National Park. Beaches, caves, plantations. Also cycling tours of the park. Watch for Pink Dolphins at Dolphin Bay.
b> Pineapple Plantation tour, more interesting than it sounds!
c> Phetchaburi temples and hilltop old palace.
d> Palu-U Waterfall and jungle.
e> Elephant Village ride/trek.
f> Snorkeling trip to Koh Talu and Bang Saphan, full day
g> Floating markets tour, half day
h> River Kwai can be done in 1 day but strongly suggest the overnight trip

In town go to Koh Tikiab temples and see the monkeys, La Mer hilltop restaurant overlooking the coast for amazing view. Fishing harbour restaurants at night. Tea at the famous Sofitel Hotel. Evenings are strolls down by the harbour, cafes, restaurants and bars, there is only 1 show in town, the Bali Thai at Grand Hotel Plaza.
Also night golf range and prawn farms where you fish for your own dinner.
If you are young then several lively local discos and jungle 'pubs'.

Tours try http://www.travel-huahin.com, general links http://www.huahin.20m.com,
http://huahin.sawadee.com
Bali Thai http://www.huahin.8k.com

There are about 8 championship golf courses. There is sailing and kite-surfing on the beach, also you can try windsurfing too. Don't miss the old palace, there is plenty of Thai history. Book your tours from travel agents in town, usually much cheaper than from your hotel.

we spent 7 days in HH in november..we stayed at the marriott and were very pleased...the town is a "sleeper" in our opinion...i don't mean that in a negative way..it is quiet...the market is low key and there is not too much to buy...we spent lots of time at the beach in front of the hotel (marriott has widest section in town), we looked at the other major hotels for future reference...sofitel for tea and a look, forget the hilton, hyatt is beautiful, but too american...la mer restaurant is a must (15 min. taxi ride south of town..)..

we rented a car from budget at the grand hotel for 2 days...quite cheap...drove south mostly
did the national park but were not too impressed with that..
elephant village just west of town is worth 15 minutes---basically a commercial venture, but you could get right close to the animals...
the floating market is about 1 hour north...welll worth it
enjoy and rest
