Hi Eurotraveller,
I have two recipes from a book that was supplied as part of a day at Chiang Mai Thai Cookery School, which is run by Sompon Nabnian(Tailands No1 TV chef) and his wife.
Black Sticky Rice Pudding and
Mango with Sticky Rice.

Here is the Mango one

INGREDIENTS
2 mangoes
600g sticky rice - soaked in water for at least 3 hours
500mls thick coconut milk
200g sugar
1/2 teaspoon salt
5g sesame seeds - roasted
For the Sauce
120mls thin coconut milk
30g sugar
pinch of salt

Steam the soaked sticky rice for 15 - 20 minutes. Mix the thick coconut milk, sugar and salt together. Once the rice is cooked put it in a bowl and while it is still hot add the milk, sugar and salt mixture and combine thoroughly. Leave to rest for about 30 -50 minutes so that the rice has time to absorb the coconut milk. Now mix the sauce ingredients together and set aside.

When you are ready to serve the dessert, divide the rice into 6 portions and put into seperate bowls. Mango slices on top,then pour the thin coconut milk over and sprinkle with sesame seeds.

Neil, I highly recommend the bamboo thingy. I told my boyfriend he could also wear it as a hat!

Leigh, thanks for the recipes. I did try the sweet sticky rice and I know a lot of people love it but I prefer the plain stuff that you can eat savory foods with.

I soaked more rice overnight so I am cooking more today. Yummy!

Hello eurotraveller: Another tips for sticky rice: My friend who has a Thai(Chiengmai) wife told me that his wife safe the rinsing water(from the rinsing of the sticky rice from the day before) and added it to the steaming pot. somehow, this rinsing "mother" help the rice to stay soft longer. As you know the local Ciengmai people prefer sticky rice to the regular rice.
Let me know how it turns out. He(my friend) said that his wife's sticky rice is soft all day in the bamboo container.

Using the rice rinsing water to steam the rice in is an interesting tip.

I will give that a try next time I cook sticky rice.

My sticky rice turned out great a couple of days ago. It is definitely becoming a staple in my home!
