Cicerone and I have posted lots of information about Hong Kong on this forum. She lives there, and is very knowledgeable with shopping, high-end eateries and hiking. I grew up there and visit often, but I am more into the more basic stuff like how to get around.
There is a good section about Hong Kong on this site, published by Fodors. You may already have read it. You will also find lots of information on the Hong Kong Tourism Board's website at www.discoverhongkong.com. Or find a guide book. Forum like this is most useful to ask specific questions. The narrower your question, the better the answer you're get.
Anyways, Hong Kong is a small place. 5 days is a lot of time. In fact, you can make a day trip or overnight trip to nearby Macau. And Hong Kong doesn't have a lot of "must sees", other than riding the Star Ferry across Victoria Harbour and taking the Peak Tram up to the Peak. It's mostly about walking around exploring various parts of the territories, including some of the islands.
