Hong Kong -1st Night
After a fourteen hour flight, which I hope to sleep 4-6 hours, I arrive in Hong Kong at 6
o pm on a Thursday and head to the Salsbury YMCA. I figure I will get settled in time for the light show. As a first timer in China any suggestions as to what to do the first evening? I will try to stay up until 11:00 p.m. so have 2.5 hours; walking, eating, maybe have 'yi bei pijiu',
I also hope to get up at 5:00 a.m. (This fits into my CA time adjustment)and again walk around, eat something and what
ever else prior to a 10:00 meeting. Any suggestions where to go/eat and what to do? I'll have to cut it short if tired but think this will be my schedule, whether I like it or not. I am looking for things near the Y and will venture further later in the day.

Laser light show at 8pm. If you get a harbour view room at Salisbury YMCA, you can probably watch it from the comfort of your room. You can definitely go for a late-ish dinner after that. (My favourite place is Sweet Dynasty, which gets slightly less crowded after 9pm). Or you just take the Star Ferry to the HK side--surely you'll have other posters with suggestions.
For a morning activities, I like walking along the harbour from HK cultural centre, there is a restaurant called Serenade that does early dim sum breakfast from 7am or so.

In Hong Kong, they use Cantonese, so it's "Yut bui bear jou". 
Yes, the Star Ferry is a nice idea, or just wander around Tsimshatsui, or take a bus up Nathan Road to Mongkok and wander around the very busy and crowded side streets and night markets there.
For beer and drinks in Tsimshatsui, there are lots of cool restaurants and bars east of Nathan Road, on Hart Ave, Pratt Ave, and Knutsford Terrace. Also plenty on Hankow Road west of Nathan Road, just up from the YMCA.

you will be very tired, but TST is very stimulating...just walking around will be nice and awaken your senses...
i think the walking and the show will be all you can accomplish....11PM will be a stretch probably and you will wake early ....
go to a market first thing in the morning to view the activity...there is one not far from the kowloon park...ask at the Y...

I think the bus is a bit adventurous/ high energy for me for the first night; but have it down for the second evening.
So is early morning dim sum like a breakfast burrito? Or should I expect to be biting into the same later-in-the-day flavors? (Not that I have had one yet but am looking forward to getting my fill). Also any recommended coffee shops open in the morning?

Crossing on Star Ferry takes about 10 min. Ferries run almost continuously.
Dim sum for breakfast is almost exactly the same as the regular one. Traditional breakfast consists of congee, sometimes with fried dough. BTW, don't expect restaurants to serve dim sum after lunch hours.
