free weekend in CM

My fiancee is taking a 2 week Thai massage course in CM after our honeymoon. The class lasts until 5PM M - F so she has evenings and a full weekend to explore the area...any ideas?
She could probably see most of CM during the weekday evenings, maybe CR?

What month will it be (so we'll know how much daylight she'll have left at the end of the day)? She could sign up for an evening cooking class for one of her weeknights. She could also go to the khantoke dinner at the Old Chiang Mai Cultural Center (touristy but still fun). And of course, there's always the night market! Not sure when the wats in town close, but she should try to see at least a few of them. On the weekend, I'd recommend getting out of town - definitely catching Doi Suthep and maybe visiting the Elephant Conservation Camp or doing a short trek and visiting a hilltribe or two (she might want to enlist the help of Sergeant Kai for her weekend time).

Shell arrive in CM at 20:00 June 18th, Depart at 20:00 June 30th.
I've been watching the CM or CR postings but her situation is different because of the evenings in CM.
The idea of getting out of town ion the weekend is necessary. I've seen numerous postings about Seargent Kai also. I need to present a comprehensive set of ideas to Tina and her friend Lucila so that they can decide for themselves. Thanks for the ideas that you posted.

While she could go to CR for the weekend, that would take all of her time. Better that she get a driver one day to go out to Doi Suthep and do some shopping/sightseeing out of town.

Evenings, a nice dinner, walking, night market... she'll find plenty to fill her time.

Suggestion for a night and a day near Chiang Mai:

I found this new place just about 45 minutes drive from central CM and it's call Proud Phu Fah resort. Quite high up on the mountain around Mae Rim(cool nights) and the rooms and atmosphere are very romantic - perfect for a special night out after class is over! Should be able to get a suite for about 4,000 baht.

In the morning near the resort you can take a scenic tour on guided ATVs and see some waterfalls, national park etc.
