Do we need to reserve trains far in advance or just rock up to Station?

Hi there we have an ordinary JR pass for our 15 day trip kicking off Oct 19th i.e.next week ...sooo excited!
Do we need to book all of our JR trains ASAP when we get there - or can we keep our schedule fairly open and book on the day i.e. Just show up at station for our chosen train?
How busy are trains? Thanks in advance for your views.
