Is daylight savings time used in China?

No. Not only that, there is ONE time zone for the entire country, which is very weird for such a huge country....

Yes, I was aware of the "one time zone", but I wanted to make sure about the daylight savings time.

I guess that with only one time zone, more than half the country is always on daylight savings time...

Geographically, yes. Population-wise, no. :)

Also, out west, local farmers, markets, etc can just start later and ends later on the clock.

No daylight saving and when it's 8am on the clock in Beijing it's 8am everywhere in China. They also tend to use a 24 hr clock, not AM/PM, so 1pm is 13:00.
