Cooking Classes/Thailand

Looking for recommendations for short term (1 wk) cooking classes in Thailand. I would prefer to be outside of Bangkok.

The Regent in Chiang Mai has just opened a new cooking school. The article I read said that it includes shopping in the markets, as well as hands on preparation. Not sure if you have to be staying there to enroll, but I would bet you do.
