May to August has the least rain and coolest temperatures historically, Nina. That said, we were there in January -- height of the rainy season -- and it only rained alot one afternoon. Tropical climates tend towards the brief/intense downpour.

We've been in August and in December/January. Both times were lovely. August was hot and sunny and dry, not a day of rain. December/January was hot and usually sunny with occasional afternoon/nighttime rain...and everything was gorgeous green and lush. Personally, we preferred it in December/January because it was so green. The occasional rain didn't bother us at all, in fact, we liked it.

Hi Nina-
Bali is south of the ecuator, tho not by much, and their 'winter', such as it is, occurs in our summer. So, if heat and humidity are any concern, plan on July/August as it is the coolest time of year. It's also a lovely time because they break out their amazing kites, some of which are the size of trucks(!). I've been there at many other times of year and find this the best. Happy Trails!
