Well, if you are on the Peak the only place for a cocktail would be either the Cafe Deco or the Peak Lookout. The Cafe Deco has the far superior view, and they also have a small balcony with really a knockout view of the city, so I would opt for that if you are up there for sunset. See the address above. I don't think you would need a booking for an outside table just for drinks. The tables are tiny and don't hold more than 2-3 people max, so people generally do no do more than have drinks, desert or coffee there, and sunset is still a bit early anyway for dinner (6 pm or so). This is probably a good choice to stay for a drink and then go someplace else for an actual meal.
The building in which the Peak Tram is located is currently being re-built and may have more bars and restaurants in it when it is finished, if this appears to be getting ready to open by October I will re-post. Does not appear to be ready last time I was there a few weeks ago, although it was originally supposed to be finished by the end of June.
There is a Chinese restaurant on the ground floor of the Peak Galleria, the same building in which the Cafe Deco is located which also has a nice and large outdoor terrace, however, their views are pretty much obscured by trees and the Peak Tram which is a shame.
