I took a look in July. There are lots of airlines that will go MIA-BOM with one stop.
If you want one stop for MIA-COK the choice is between Qatar and Emirates.
There are several 2-stop itineraries. Most have stop in India (DEL or BOM).
Bangalore has 1-stop itineraries on Qatar, Emirates, British, and Lufthansa
So it could be a matter of a lack competition. Or something else.
