U.S. - E.U. Dual Citizens: Any Issues W/Using EU Passport In The Era Of COVID?

Hello: I'm a dual U.S. - Polish citizen. I usually travel to Europe w/my Polish passport, as I find it's easier. When I came back to the U.S., I would just put my Polish passport away and pull out my U.S. one. But, that was before COVID...

I am fully vaccinated and looking forward to my first International trip since this COVID nightmare began. Am going to Paris & Edinburgh this December. But, I just want to make sure I won't run onto any issues... Anyone have any advice/experience that could help? Am also looking in to seeing how to obtain my EU digital certificate (if anyone has info on how to do it, I'd appreciate it), FYI.

Thanks!

I am dual Canadian-Polish.

Where where you vaccinated?
In addition to the Polish passport do you have a;
- "profil zaufany?"
- PESEL?
- "e-pacjent" account that you can access using your "profil zaufany?"
- are you registered in a Polish clinic and have a Polish doctor?
- are you contributing to the NFZ?
As far as I know one can not get Poland to issue a Covid dig. cert with a non-EU vaccination
I have gone deep down into the bowels of the internet trail and the best I could find was to "talk to your (Polish) doctor"
