Have you thought of flying direct from NY (Newark) to Edinburgh? You could then drive down to York by car, or catch the train.

The road or rail Edinburgh to Newcastle snd on toDurham is scenic. South of Durham to York is rather dull.

Have you thought of an 'Open Jaw' ticket? This is where one flies into one city and returns from another. If you fly by the same airline the cost is generally worked out by halving the return fare to each city and adding the two together. (e.g. Newark to Manchester. Return fare $1200, Edinburgh to Newark Return Fare $1000, the 'Open Jaw' fare. Newark /Manchester. Edinburgh /Newark $1100. These are not real fares but just for example).

Last summer my wife and I did this in the other direction.. We flew in to Richmond, Virginia from London, via Pittsburg. to see friends. We then hired a car and drove to the North Carolina border and along the Blue Ridge Parkway to Lynchburg to attend a nephew's wedding, before flying back from Lynchburg to London via Charlotte.

My two daughters live near Edinburgh and when they fly to the states they always fly from Edinburgh to Newark on United, and change planes there if necessary, it is much simpler than flying via Heathrow.

For your information United fly from Newark to both Edinburgh and Manchester non-stop.

Ironically,I just got back last night from working a flight from Manchester. It is definitely easier to get to the northern areas of the UK using Manchester airport versus London/Heathrow. You can use Virgin Atlantic from Atlanta,Delta from JFK,American from Chicago and JFK for a quick 7/8 hour flight from the states. The Manchester airport is very nice and very user friendly with the train station right at the airport.
