Garden Route

When we leave Cape Town we plan to spend one night in the Wine Country, one night in Hermanus and then 3 nights in Knysna. Does anyone think that 3 nights is too long for that stop. We are going on 6 nights of safari afterwards. We don't golf, lay at the beach or do adventure sports. I can't really figure out how we would fill 21/2 days in this area. Any thoughts?
