That would be either the David Intercontinental or the Hilton. There are 2 Sheratons - the Sheraton Moriah is not very nice and the other Sheraton is supposedly ok. The Dan is lovely, but still can't compare to the other 2. The Intercontinental is spectacular - Clinton, Madonna and others have stayed there. The breakfast buffet is to die for! It is the South end of the beach, and the Hilton is the North end of the beach.

In Tel Aviv - while the Intercontinental and Hilton are very good, I would still choose the Dan Hotel. This hotel always kept its very high standard and is considered a very nice place to stay. Their breakfast buffet is great. In Eilat I would go either to The Royal Beach Hotel, The Dan Eilat, or the Herod's.

Eilat--agree that Royal Beach (Isrotel chain) is the top-notch. Best pool area, best restaurant. I would rank them above Dan (which is also very nice.)
Princess is also excellent (esp beaches) though the main drawback is that it is 15min cab ride from the central part of the town where the night life is.

"Princess" is a hotel that attract work places in Israel which like to send their workers in large groups for joined vacations. They tend to be noisy and I personally try to avoid those groups. It is also the furthest hotel from town, very close to the border with Egypt.Each outing requires some kind of car transportation.
