tipping for guides/trackers/staff

This is a case where what I prefer differs from reality!
I would prefer to not tip ever, anywhere, unless there was service that was totally above and beyond the scope of the job. I'd rather have appropriate compensation built into the price.
But I bow to the reality that there are jobs that are not structured this way, and where tips are expected as a significant portion of compensation.
So I try to tip according to prevailing local custom, whether I'm home in NY or whether I'm safari. Occasionally I hear someone suggesting that if we refuse to tip 'they' will get the message, unfortunately I think that sends the message to the wrong party.
I really hope that tipping the chef does not become the norm.
I did see a very funny show on TV that set up a hidden camera to watch what happened when they put a tip jar in a dentist's office. It was amazing how many people tipped the dentist, just because the jar was there.
