Not so relevant to vaccinations, but be very careful about what you drink. They often use water from the Nile. i made the mistake of having a hot chocolate and it also contained Nile water. Needless to say, I got sick. I would stick with bottled water/drinks and if you need a hot beverage have that only from a reputable hotel or your Viking ship (I wouldn't have it on the cheaper Nile boats either)
