Quiet Cairo Hotels
 

I realize that Cairo is not the place to go for quiet. But I'd at least like a hotel where I won't hear traffic noise or music from party boats once I am in the room with the windows closed.

Can i find this at the Sheraton, Ramses Hilton, Marriott, Sofitel, etc...?

I had no problems in the Nile Hilton.
Thee are quiet cheaper hotels too.
Open booking.com and "Guest reviews" and press then on topics like "noise", "loud", "quiet", etc. to get an impression

I stayed in the Zamalek neighborhood, actually an island & a quiet leafy low-key walkable & very central area. The hotel where I stayed has unfortunately closed but if you can find a place there I recommend the area.
