Both places provide an opportunity to interact with the Maasai. E Unoto is very focused on the cultural aspect of it all - members of the mgmt team are Maasai! I don't know what the situation is at Oldupai Camp since the ownership is French.
From a tourist crowding point of view, the area near Oldupai Museum is one of the busiest in the Northern Circuit. Meeting tourists is a daily routine with minibus after minibus stopping at the few bomas in the area.
If you are truly interested in getting away from the crowds a bit then doing walks and visits with the Maasai from the Irkeepus Boma (north of the Sopa outside Ngorongoro) should be considered. This area receives a small fraction of the crowds and the scenery is very beautiful.
Combining a 2-3 day Ngorongoro stay with Maasai visits and walks around the rim and to the north is IMO a lot more interesting than the dusty areas around the Oldupai museum!
