Last Minute Driving advice

Two weeks today, we leave for two months in Southern Africa. Most of our time will be unstructured, but I do need some help.
Plans are for five days in Victoria Falls with a Chobe safari; then four days in Cape Town.
Three weeks to get to Port Elizabeth; fly to Durban. Then three weeks and two days to get back to Cape Town with three days there again before we depart for U.S. Thinking of Swaziland, avoiding Kruger (have done good safaris in Kenya)and by-passing Johannesburg. Should we do the northern section of S.Africa? Should we take longer to get to Port Elizabeth?
Would really appreciate some advice.
