Firming up February Itinerary for Cape Town, Garden Route

All of our reservations were made several months ago. We have business class seats on SA to Cape Town (thankfully I ignored the naysayers that flights would not be available 11 months in advance), returning from Port Elizabeth. We have 4 nights in Cape Town, 2 in the Winelands, 3 in Knysna and 3 at Shamwari Private Game Reserve. Am loving that the exchange rate is so good right now!

We will try to be flexible, but the current plan as I've laid it out is as follows:

Cape Town: Table Mountain cable car to top (on a clear day), Robbin Island, 2 Oceans Aquarium, shopping at Cape Quarter Mall, De Waterkant, and Long Street, Company's Gardens, Castle of Good Hope, Kirstenbosch Botanical Gardens, Old Biscuit Mill (on a Saturday), Izuko South African National Gallery all by taxi. Do you recommend using Uber, instead of standard taxi?

Cape Town to Franschhoek via Cape Point Peninsula: Rent a car early morning and drive the circular loop that includes Chapman's Peak Drive, Cape of Good Hope, Cape Point and Boulders Beach. Pick up bags at B&B and head to Franschhoek.

Franschhoek: 7 or 8 PM dinner on first night. Next day will be a full day shopping and wine tram with another dinner out.

Franschhoek to Knysna: Not too early morning departure to Cango via R62, continuing on to Knysna (detour via Mossel Bay to enjoy Garden Route?)

Knysna: Hiking in Roberg Nature Reserve, Emzini Township Tour, local horseback riding, Featherbed Nature reserve.

Knysna to Shamwari via Bloukrans Bridge to observe (not participate in) bungie jumping

Shamwari: Game drives, 6 in total.

How does this sound? Am I missing anything?

Thanks in advance. You have all been helpful so far.

Not sure if topping this will help or of all of the "experts" simply think this is an amazing itinerary .

Craig, did you try asking on TripAdvisor as well? While I often find that the feedback given on TA of an inferior quality to the advice here, it's been useful for Southern Africa.
