I am starting to buy currency for my trip later this year, I will only be in Dubai for 2 days but am hoping to do some shopping there. Can I get Amex travellers cheques exchange there for local currency, any advice or tips what to be wary off would also be appreciated. First time in this part of the world

yes you can change your TC's there. Also you can you credit/charge cards all over the place.
Dubai is very much like a western european country. Safe, clean and expensive.

I second what rdkr says. Dubai is an extremely safe, convenient, and fun place to visit. The only thing to be wary of is spending too much!!
If you are going in July August, it will be about 50 Centigrade/125 Fahrenheit and muggy, but you will probably be either in air-conditioned facilities or the water. The rest of the year the weather is pretty pleasant.
