For traditional Moroccan cuisine in beautiful surroundings: Dar Yacout, Le Tobsil, Le Marrakechi.
Great lunch or dinner places: Ryad Tamsna and Riad Jardins de la Medina (both in the medina, but easy to find).
In the Ville Nouvelle: La Trattoria, Fassia, La Jacaranda.
Romantic: Villa des Orangers (traditional Moroccan cuisine).
Casual snacks / drinks: Kechmara (bar in the Gueliz area of the Ville Nouvelle.

They're both fantastic - so I dont think you could go wrong with either. I stayed at the Villa a couple years ago and really wished I could stay longer....but I've heard people say the same about Enija.

Hi aurorauna,
I stayed at Riad Enija last month.
It was perfection... an oasis.
The rooms were beautiful, and the food was lovely.
Make sure you spend an hour or so on the rooftop at sunset. We had drinks up there and you overlook the medina. Heaven.

I would like to in 4 days live as a moroccan...take in the sights...but not the touristy ones....

The places you've listed are "touristed" but not necessarily "touristy" if you see what I'm saying. I think the Koutoubia is missable - and the tombs....but the palaces, gardens, and medersas are worth seeing.
I think Kasbah Toubkal is the best thing on your list that you can see/do to get a feel for life outside of the tourist centers.

My recommendations are from a Nov. 2004 trip. I enjoyed dinner at Ryad Tamsna, and Dar Moha, which has a traditional attmosphere and menu. If you get tired of tagines, Narwama, next to the Jardines de la Koutoubia hotel, had wonderful Thai food. Lunch at La Mamounia is a good way to see this historic, but faded hotel.
