If you had another couple days, I'd say go to Luxor, too.

Day1: Cairo, visit Pyramids, Sakkara, Memphis
Night, Sound & Light Show
Day2: Egyptian Museum, Citadel, Old Coptic Cairo
Night, Dinner at Nile Cruise
Day 3: Flight to Luxor, visit Valley of Kings, Hatshepsut, Memnon and Karnak temples, then back to cairo
Night, Sound & Light Show

I agree with that, 3 days is not enough to visit Egypt. You can go to many places like the Pyramids of Giza, Aswan, Egyptian Museum, Siva Oasis, Abydos temple, The western desert, temple of sobek and horus, Abu simbel temples, Nile river cruise etc. You can also visit the shopping malls in Egypt. Have a nice trip!

With just three days, I would not try to go outside Cairo . . I know what sightseeing on business trips is like!. Traffic is horrendous and will take much of your time there.
For sure see the Great Pyramid of Giza and the Spinx. Go early to miss the crowds of tourists buses. If you are into photography, have the driver take you around to the back side to catch a sunrise over the Pyramids . . unforgettable! The night show is interesting, but would be low on my list if time was short.
The Great Mosque of Muhammad Ali Pasha or Alabaster Mosque (also called Citadel of Cairo) is worth at least a half day.
I enjoyed the Khan El Khalili market, but it can be overwhelming if you are inexperienced with the culture. I would not waste time in any Mall.
If you are into antiquities and history, the Egyptian Museum or Museum of Cairo would fill at least one day, but you cold spend as much time as you have.
Try to have at least one meal at an Egyptian restaurant . . mostly in the center of the city. Very memorable!
Try t get a good overview of the city and culture so that you can dive deeper in your next visit!

Three days? That's not much time. Go to Cairo. Hire a guide & driver. Great Pyramids. Go into Khufu's Pyramid. Sphinx. Ride a camel. Saqqara and Memphis. Go to the Kahn El Kahlili market and shop. While you're there, have coffee/tea at El Fishawy. Salah Hadin's citadel. Alabaster Mosque.
