My girls' bought inexpensive fans (around $5) in the Epcot China pavillion gift shop. Then the fans were personalized right there (free) with the girl's names written in Chinese.
My husband absolutely loves his mesh Indiana Jones style hat that he bought right outside the Epic Stunt Spectacular show in MGM.
My son always loves a new Disney/ Star Wars T-shirt from the Star Tours gift shop. Same son always gets a pair of Disney boxer shorts on every trip.
My girls are really into the add-a-link charm bracelets and love their Disney birthstone charms.

The ears! Nothing is more Disney than the ears. Of course, your kids will not wear them again after the trip, but they can sit on the shelf and instantly remind you of the trip.
(although, on my last trip, I saw the Mickey gloves, and thought they were the cutest thing going...)

I bought a silver TinkerBelle necklace that I love. They also have these memo holders that are miniatures of the princess dresses. I have Snow White, Cinderella and Sleeping Beauty and of course, each is holding the picture of my kids with that princess. So cute!

Pictures of my kids doing stuff like freaking out on Splash Mountain etc. These will be around a lot longer than any souvenir. But to officially answer your question it would be the Minnie dress I bought my 2 year old. SHe did not take it off forever!!

Disney picture frames for all those Disney pictures!
When we went for our honeymoon, we bought the Mickey & Minnie bride & groom stuffed toys. Every time I look at them, I think of our honeymoon. And they look so cute in the tux and dress too!

My kids got an Autography book on their first trip. (My MIL lives close by) The book is something that they took with them year after year. They were so happy to see a character that they having seen before.

I buy a pin every time I go. Since I live closer to Disneyland I have more pins from there, but I have 3 from when we visited Disney World. It is nice because if you go during the summer you can buy summer related pins, or Autumn, Christmas or if you want one that says 2006, Mothers Day...the list is endless. Also if you have kids with you, make sure you get the passports at Epcot. I didn't know about this until we left, but kids can get passports and get a stamp with each "country" they enter in Epcot.

I dont' know if they have them in Florida, but in Disneyland they have the hand cut silhouttes on Main Street. I think they were like $7 for two copies. And they will take a bit off of your chin line as well.
There are a huge range of hats. The outerwear is nice also, but kind of expensive.
