Need help with last minute vacation! Where to go?

I am trying to book a last minute trip somewhere in the caribbean, but since it is last minute and high season, not having much luck. Would love any ideas of places to go that might actually be affordable. My list of requirements:
1) Beautiful, amazing, blue water
2) Safe (I'm on my own)
3) Quiet - not looking for a party scene at all. Want to sit by a beautiful pool/beach, eat some good food, and relax for a couple of days.
4) AI is ok, but not required
5) Budget - 200 - 400/night (depends on if it is AI). Can probably go a little higher if needed, but would prefer not to.

Travel time is March 23 - 27 (I know, last minute!). But really love any help all you travel experts may have. Thank you in advance!

Have you been to the Caribbean before? If so, where? Did you like it? Age group?

I've been to the Caribbean but it's been a while. Apsley love Grand Cayman, Aruba. Did a bunch of islands on cruises. However it was a very long time ago. I'm in my mid 40s and just looking for a quiet place to chill for a couple days.

I would absolutely love to go to Turks and Caicos or Grand Cayman but cannot find anything remotely affordable right now. I'd also be willing to go to Mexico but want to make sure that I'm avoiding the spring break craziness

Look into Dominican Republic, specifically Punta Cana...they have 5 star hotels "all inclusive". I live in Puerto Rico and we have beautiful hotels also but not "all inclusive". Good luck...
