Card and Passport details
I'm wanting to book a hotel in Siem Reap and they want a photo copy of my Passport and Debit Card, this really worries me, should I do it or not?
I guess they'll take a copy when we get there anyway.

Do not do it under any circumstances! Some legitimate hotels do ask for this when booking direct but I would just choose another. hotel or use a booking site like www.agoda.com or www.booking.com ( I much prefer the latter). You can provide your card details securely online using those websites. Usually, this just secures the booking and you actually pay either on arrival or departure. You may as well write your bank details on a post card as send it on an email!

For our up and coming Vietnam jaunt I've been using Agoda and have paid in advance for Dalat and Danang.
Just booked a hotel in Hue using their secure website, got a great deal, but will settle up on arrival.

First of all, if you are from the US, you should not be using a debit card. You don't have the fraud protections from a debit card that you have from a credit card. Get yourself one of the many no foreign transaction fee credit cards.
This is actually a fairly common request from hotels in VN, though I can't remember hearing about this from Cambodian hotels. It's probably fine, but don't do it if you are uncomfortable with it. As others have said, see if you can book on agoda or booking.com as you can then book securely.
