Credit cards in cabs in Paris and London
We will have a lot of luggage, so plan to take cabs to and from the airports in Paris and London. Do we need to have a lot of cash on hand or will they take credit cards?

In London, some do: some don't
But no-one with more sense than money hails a taxi off the rank at a London airport, except for destinations east of Oxford Circus from LCY. Search on sites like this for airport car services like just airports from Heathrow, Luton or Stansted, and prebook a car to meet you. From Gatwick, get the train - however much luggage you've got.

Same in Paris, but you won't have a problem getting one at the airport that takes credit cards, you just have to specify to the guy who runs the taxi queue. I think most do. For the return, I presume you'd have your hotel order one, and then make sure they also specify it to be sure.

Taxi from CDG is fine.
Taxi from (I assume) LHR is ridiculous. And if by chance you are arriving at LGW, a taxi would cost as much as your transatlantic airfare (only a slight exaggeration.)
Justairports.com or a similar pre-booked car service would cost half what a taxi would run. Must be pre-booked - can be done on-line.
That is for LHR - for LGW, a train really would be best. Then you could take a taxi from the train to your hotel. This would be faster and much cheaper than a taxi or a car service in from the airport. LGW is 30 miles from London and road travel will take forever.
(Is there a reason you have so much luggage? and is there so much you'll have trouble wrestling it on to the Eurostar?)

>>I originally thought we would pre-order a car service, but there I read so many complaints about them I was afraid to do it.<<
Where did you read that??
Other than the tube, a legitimate car service is the only way I'd ever travel between LHR/London.
