The recommended route would be to go from Monaco Monte Carlo train station to Ventimiglia (half an hour) by local train then by InterCity from Ventimiglia to milano Centrale (4hrs) and finally Milano Centrale to Venice by Eurostar Italia (2.5hrs)

Yes multiple changes of trains because the Italian Railways have decided to cut most international trains to neighboring countries and all to France so you have the hassle of changing at Ventimiglia and Milan and perhaps Genoa at times. Go to www.trenitalia.com for schedules and fares (Ventimiglia to Venice and perhaps nab some discounted tickets on the Milan to Venice portion - Ventimgila to Milan is regional or IC trains with a cheap fare - anyway for lots of great info on Italian trains check out these fab IMO sites - www.seat61.com; www.ricksteves.com and www.budgeteuropetravel.com. Have no worry about being able to buy tickets and get on trains once there - not sure how the ticketing works if you can buy a Monte Carlo to Milan ticket or have to buy the Italian portion only in Ventimiglia (if not pre-booking on www.trenitalia.com.

Milan to Venice by Eurostar Italia (2.5hrs)>
Eurosar type trains are marginally faster on this route and can cost a lot more - InterCity trains are slower because they stop more but are reliably cheap - no great need to advance purchase and lock yourself into stone like on ETR type trains in case you want to wing it - all segments from Nice to Venice can be on cheap IC trains not that much slower than Eurostar type trains.
