I'm planning a trip that will begin in San Sebastian and end up in Provence (Menerbes). We are driving and I thought a good half way point between the two would be Toulouse. Does anyone have a recommendation for a nice hotel close to restaurants in that city? Perhaps in Old Town? We are there only for one night so it is not necessary for us to stay in a luxury property. Just something that is a good value, has a good location walking distance to restaurants, and is well kept. Basically a place to drop our luggage and spend the evening walking around town.

If anyone has an idea for a mid-way overnight stopping point besides Toulouse, I'd like to hear about that too. We've already been to Carcassonne, so that wouldn't be of interest to us.

If you are stopping in Toulouse, you may want to consider the Hotel des Beaux Arts; http://www.hoteldesbeauxarts.com/gb/

I stayed here a few years ago and found it to be a charming place. I stayed in the room which had a small terrace overlooking the Garonne river.

Check the Hotel Albert 1er as well. Great location just off the main place--Capitole.

I really liked the Mercure at Place Wilson. A very convenient location and walkable to the main square (Capitole) as well as anything else you'd want to do, pretty much (it is close to metro lines anyway). Plus there are lots of restaurants around place Wilson and nearby. no, it's not charming because it's modern, just a good hotel in a convenient location.

There is an Ibis Hotel near Matabiau railway station, basic and clean, close to a car park, metro station and city center. It is very easy to drive from the hotel to the main road to Montpellier and Provence.

I would recommend it for a one night stay. It's close to the centre, not expensive, and has access to parking in the nearby public lot. We've done this the last few times we've been in Toulouse.

The Beaux Arts is lovely, but expensive, and hard to find parking.

Mercure Wilson has its own underground parking, is well located, and very comfortable. Again, usually more expensive than the Ibis, but more comfortable.

The Mercure Wilson does have its own parking but it's very tight on space. The nearby Mercure St George is similar but has the advantage of having direct access to the enormous underground car park associated with the shopping centre there. Some advice on driving into central Toulouse for the uninitiated - you'll need a GPS, I'm not joking.

I didn't even think about the parking situation, wasn't paying attention to the need for that. In my opinion, the Mercure St Georges isn't really in as nice a location being in the shopping center, rather than just outside place Wilson which has a park in it and lots of sidewalk restaurants around (there and along Jean Jaures allee). But it's not that far away (a couple blocks) and would certainly be okay if parking was a major issue.
