I would get a few travel guides. You are talking about a substantial amount of time but also a sunstantial bit of real estate.
You need to figure out your budget, interests, modes of transportation and how to deal with the weather.

Another newbie who leaps before looking.
As Aduchamp1 says, this person needs to get their act together before posting.
Why would an Aussie want to leave the summer to go to Europe in the middle of the winter?

Robert2533 - When it's winter in the U.S., I will go to South America. I certainly wouldn't go to most of Europe.
Hard to believe that Aussies only get time off during their summer.
I'm not being harsh, I'm being practical.

You can start by clicking on "Destinations" from the menu at the top of the screen. Also by reading some guide books. You're covering a lot of territory in 6 weeks. I would stick to Spain and Portugal and I think that's a lot to cover.

We spent a month in the south of France in November 2010. It was glorious. We were looking for somewhere to rent for a 3 month stay...which we've discounted for the time being, but now we know where we want to go back for more. We fell in love with the area from Uzes to Montpelier to Perpignan to Pezenas to Ceret to Collioure there is a lot in-between and on down to Spain. Actually, with your time frame, you may want to start in Toulouse and work your way down through Cathar country to the coast, proceeding to Figueres and Barcelonna, then cutting across the country....well, you could take that path as a start and build from there.
