35 th anniversary in Provence & Paris

35 th anniversary in Provence & Paris
My plans are to visit Provence in July 3-7th arriving in Nice then renting a car. & driving to Provence I plan on catching a train from Avignon to Paris on the 7th
I haven't decided on which town we should establish a base from & hotel suggestions would be helpful
We like bohemian luxury wineries ,markets & great food
I'm having difficulty with an itinerary
I heard st remy would be a good choice gordes, les baux &
Le sur de la sogue
I'm holding reservations @ a few hotels in those towns
If anyone has suggestions of a total itinerary that would be great
I would like this to be a special trip

With only 3 1/2 days, it's hard to suggest a "narrowed down" itinerary for you unless we know what your interests are.
Cute little villages
Roman Ruins
Scenic drives through lavender fields
Shopping
Museums
Large cities (Avignon, Arles, etc)
farmer's markets
Gorges
Caves with stalactites & mites
remote non-touristy countryside
winery visits
vineyards
Antique markets
Alps
Remote villages
hiking
bicycling
castle ruins
long leisurely lunches with a snooze afterwards
sitting at cafes & people watching
And don't say "we want to see it all" because you don't have enough time to see it all.
Do you want to sleep in a city that has restaurants, shops, and cafes you can walk to, or do you prefer a hotel/B&B in the quiet countryside?

Have you visited a winery in France before? It is not like visiting one in the USA (we live near Napa/Sonoma). You don't just drop in for a tour and tasting - you usually need to make an appointment. Doing so will consume a lot of time - which you really haven't got much of.
My wife & I have vacationed for 18 weeks in Provence. We stay in gites (houses), so I don't have any hotel recs. I do have a 27 page itinerary that describes our favorite villages, markets, scenic drives, sites, etc. It has a section on Provence fabric too. I've sent it to over 3,000 people on Fodors.
