There are a few splashes of color in the dining room -- the royal blue of the tablecloths, for example -- but the real excitement is on the platters streaming out of the kitchen. Order the tiradito criollo, for example, and the slices of fish arrive covered in a vivid sauce made from yellow peppers. This place has won every award in the book, undoubtedly because the chefs constantly look to other countries for inspiration. This is one of the few cebicherías serving carpaccio.
