With a sleek design that calls to mind Los Angeles as much as Tokyo, this restaurant in the Hyatt Regency is one of Santiago's most stylish eateries. After passing through a foyer painted vivid red, you enter the calm dining area with its sliding screens and view of a waterfall. Downstairs are a sushi bar and two tatami rooms (no shoes allowed, but slippers are provided) with sliding screens for privacy, and upstairs are two grill tables. The menu is constantly changing, but look for the smoked duck with eggplant puree or the grilled tuna served with a seaweed salad. There is also a long list of sushi and sashimi available.
