Fodor's Review

This winery isn't on the Caminos del Vino, but it should be; it is a temple. As you enter, Gregorian chant echoes through the whitewashed chambers, creating a sense of drama. Storage, winemaking, bottling, and tasting all take place in a labyrinth of caves, allegedly carved out of the mountain by Yugoslav prisoners in 1932. Outside, a large park is an ideal place to enjoy a picnic lunch with a newly purchased bottle—a good idea, since it's the farthest winery from town.

In addition to the typical Argentine wines such as Malbec and Cabernet Sauvignon, Cavas also works with the varietals Viognier and Chenin.
