In the wooded foothills of the Andes, Las Hayas overlooks the town and channel below; ask for a canal view and, since the rooms are all decorated differently and idiosyncratically, sample a variety before settling in. All feature Portuguese linens, solid oak furnishings, and the Las Hayas trademark: crisp white fabric-padded walls, covered in bright one-color floral prints. A suspended glass bridge connects the hotel to a spectacular health spa, which includes a heated
pool, Jacuzzi, and even a squash court. There's a great restaurant on-site, Le Martial, which prepares an excellent version of mollejas de cordero (lamb sweetbreads) with scallops.
