Individuality reigns at this small complex. The cabins and suites are all decorated differently, with a name to match: for example, the ocher-painted Mexicana cabin is surrounded by agave plants, and its exposed-stone walls are hung with Mexican artwork. The king-size beds in each suite face large hearths; private decks are the perfect places to devour the contents of the daily breakfast basket, complete with bread still warm from the oven. The freshest local produce is at the center of the nightly three-course meal, which may feature goat, venison, or even guinea pig. (There are also à la carte options, and vegetarians are well cared for.) If you stay in a cabin, you can arrange for the chef to come and cook there.
