Just over the border of Palermo Viejo into Villa Crespo, Thymus (the name of the gland from which sweetbreads are derived) is one of the more ambitious restaurants in this ambitious culinary neighborhood. Even if the minimalist decor with its sparse stone artwork cries out New York City, 1992, the feel is soothing and upscale. One of the best features here is the tasting menu, which allows each guest to sample small portions of two starters, two mains, and two desserts. Not everything on the ultramodern fusion menu works, but it's always interesting, and they have a particular way with duck breast.
