Winemaker Michael Taylor Moore freely admits he's pushing the edge, meticulously crafting wines by hand, in the traditional European style of yesteryear. He shuns modern filters, pumps, and even sulfites, and carefully avoids pesticides. Chardonnays, sémillons, merlots, cabernets, and late-harvest wines age sur lies (on their sediment) for as long as eight years before release.
