A quietly hip vibe pervades this culinary beacon in West Seattle, where the vast bar surrounds an open kitchen. Diners of all stripes relish the Hawaiian spin on fresh and high-quality Pacific Northwest bounty. Chef Mark Fuller's famous fried chicken dinners are offered nightly ($38 for a whole chicken, served with kimchi and rice), while his saiman soup with smoked ham broth, house-made noodles, mustard cabbage, and fish cake could cure any hangover. Spam musubi, Portuguese sweet bread, and other sides showcase expertly made but down-to-earth foods. There are some two dozen whiskeys and a short cocktail list.
