Some of the city's best pasta is served at an incongruous counter sharing space with Procopio Gelateria on the Pike Place Market "Hillclimb" (a flight of stairs between the market and the piers along Elliott Bay). Experienced chef Mike Easton left the cooking line at higher-end restaurants to found this lunch-only (11 am to 3 pm), cash-only collection of tables where he prepares a few inexpensive hand-made dishes each day using antique pasta-makers and artisanal, seasonal ingredients—perhaps tender agnolotti stuffed with pecorino cheese and green peppercorns, or capellini with cured tuna heart, Calabrian chiles, bread crumbs, and parsley. A few antipasti round out the menu each day.
