One of the best of Seattle's upscale vegetarian spots, Carmelita could convert a carnivore with the smells emanating from the kitchen alone. Everything on the menu is fresh and well prepared: from the sweet potato gnocchi and beet ravioli to crusty pizza topped with nettle-spinach pesto and root-vegetable potpie. Note that the menu changes constantly to take advantage of whatever is in season. This is a popular place, so reservations are recommended. The dining room is lovely, paying homage to the natural world with lots of wood, oil paintings, and leaf shapes on the ceiling, but if the weather's nice, request a spot on the garden-shrouded patio.
