If it weren't for a tiny sign on the sidewalk pointing the way, you'd never know that Fremont has its own chocolate factory. Theo is relatively new to the Northwest's growing artisan chocolate scene, but it has already taken the city by storm, thanks to the high quality of its chocolate and the inventive creations of its head chocolatier. Theo uses only organic, Fair Trade cocoa beans, usually in high percentages -- yielding darker, less-sweet, and more-complex flavors then some of their competitors. You'll see Theo chocolate bars for sale in tons of local businesses, from the typical (coffee shops) to the inexplicable (garden stores?!). Stop by the factory to buy exquisite truffles -- made daily in small batches -- with unusual flavors like basil and lemongrass. The superfriendly staff is extremely generous with samples. You can go behind the scenes as well: tours are offered daily at 1 PM and 3 PM; reservations aren't always necessary, but it's a good idea to call and make sure there's a spot, particularly on weekends.
