The set menus change roughly every other week, with clever themes like the 100-mile dinner where even the salt is harvested from local waters (if you have dietary restrictions, it's essential to call ahead). With all products coming from the restaurant's farm (including heritage pigs), or from other regional growers and suppliers, you can expect uber-fresh ingredients, including rarities like Ozette potatoes and Roy's Calais flint corn.
