Fusion won't fly at this Belltown restaurant, sushi bar, and lounge. Traditional appetizers include kaarage (marinated, breaded, and deep-fried chicken), gyoza (steamed pork dumplings), and kakifry (panfried oysters). Aside from the gorgeous sushi and sashimi, there are many other items to consider, including the unajyu (broiled freshwater eel with a tangy sweet sauce) and salmon misozuke (brushed with red miso, baked slowly, and served with caramelized turnips). The full bar stocks more than 30 different sakes. Saito's is a tad fancier than the average sushi joint—the skylight's a nice touch—but it's tame compared to Belltown's trendy spots. There are a variety of seating options, but sushi buffs should plant themselves at the bar, where they can merely point to whatever looks good and perhaps even ask the chefs to improvise on a roll or two.
