Poulsbo
Velkommen til Poulsbo (pauls-bo), an endlessly charming village on lovely Liberty Bay. Soon after it was settled by Norwegians in the 1880s, shops and bakeries sprang up along Front Street, as did a cod-drying facility to produce the Norwegian delicacy called lutefisk. Although it's no longer made here, lutefisk is still served at holiday feasts. Front Street is crammed with authentic Norwegian bakeries, eclectic Scandinavian craft shops, small boutiques and bookstores, and art galleries. Norwegian flags flutter from the eaves of the town's chalet-style buildings. Grassy Liberty Bay Park is fronted by a network of slender docks where seals and otters pop in and out of the waves. One of the town's biggest events is the annual May Viking Festival, complete with Viking tents and weapons, costumed locals, and a lively parade.
