One of Vermont's best restaurants, this is a culinary gem inside an 18th-century countryside inn. A chalkboard in the foyer lists the farms that grow the food you'll eat here on any given night. Executive chef Jean-Luc Matecap, who has extensive experience cooking for top restaurants in France, Nantucket, and his native Vermont, is passionate about local ingredients. The inn's farm-to-table cuisine is showcased in an à la carte tavern menu, chalkboard specials, and two nightly prix-fixe menus in the formal dining room. The first ($59) includes meats such as roasted Cavendish game birds and dry-aged Black Watch Farm sirloin; the second ($45) offers vegetarian and gluten-free dishes. Service is excellent, and the wine list is large and reasonably priced. If it's summer, enjoy your meal on the patio.
